Chocolate zucchini bread


chocolate zucchini bread
Zucchini makes baked goods moist.


This recipe makes two loaves.

3 eggs beaten
1 cup oil
1 cup sugar
2 cups grated zucchini
2 tsp vanilla
3 ½ cups flour
½ tsp salt
¼ cup unsweetened cocoa powder
¾ cup plain or vanilla yogurt
1 tsp baking soda
¼ tsp baking powder
3 tsp cinnamon
½ cup nuts (optional)
½ dates or raisins (optional)

In a large bowl, mix ingredients in order given above. Divide batter evenly into two greased pans and bake at 350F for one hour.

Tip: Grate extra zucchini and put 2 cups in individual freezer bags so you'll have some on hand to make recipes like this during the winter months.
